Grilled Salmon with Roasted VegetablesIngredients:
For the salmon:
1 pound salmon fillets, skin-on 1 tablespoon olive oil 1 teaspoon salt 1/2 teaspoon black pepperFor the roasted vegetables:
1 cup broccoli florets 1 cup cauliflower florets 1 cup baby carrots 1 tablespoon olive oil 1/4 teaspoon salt 1/4 teaspoon black pepperInstructions:

Preheat oven to 400°F (200°C).

Line a baking sheet with parchment paper.

In a large bowl, combine the broccoli, cauliflower, and carrots.
Drizzle with olive oil and season with salt and pepper.
Toss to coat.

Spread the vegetables in an even layer on the prepared baking sheet.
Roast in the preheated oven for 20-25 minutes, or until tender and slightly browned.

While the vegetables are roasting, season the salmon fillets with salt and pepper.

Heat a grill or grill pan over medium heat.
Drizzle the salmon with olive oil and place it skin-side down on the grill.

Tips:
For a more flavorful salmon, marinate it in a mixture of olive oil, lemon juice, herbs, and spices for at least 30 minutes before grilling.
If you don’t have a grill, you can cook the salmon in a nonstick skillet over medium heat.
You can add other vegetables to the roasting pan, such as zucchini, bell peppers, or onions.
Serve the salmon and vegetables with a side of lemon wedges for extra flavor.
