Creamy Tuscan ChickenIngredients:
1 boneless, skinless chicken breast (about 4 ounces) 1 tablespoon olive oil 1/4 cup chopped onion 2 cloves garlic, minced 1 (15 ounce) can diced tomatoes 1/2 cup heavy cream 1/4 cup grated Parmesan cheese 1/4 teaspoon dried oregano Salt and pepper to tasteInstructions:

Season the chicken with salt and pepper.

Heat the olive oil in a large skillet over medium heat.
Add the chicken and cook for 5-7 minutes per side, or until cooked through.

Remove the chicken from the pan and set aside.

Add the diced tomatoes, heavy cream, Parmesan cheese, and oregano to the pan.

Tips:
For a richer flavor, use sun-dried tomatoes instead of diced tomatoes.
