Creamy Tuscan ChickenIngredients:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces 1 cup thinly sliced sun-dried tomatoes (not packed in oil) 1 cup chopped spinach 1/2 cup chopped fresh basil 1/2 cup heavy cream 1/4 cup grated Parmesan cheese 2 cloves garlic, minced 1/4 cup olive oil Salt and pepper to tasteInstructions:

Heat olive oil in a large skillet over medium heat.

Add chicken and cook until browned on all sides.

Add sun-dried tomatoes, spinach, basil, garlic, and salt and pepper.
Cook for 5 minutes, or until spinach is wilted.

Stir in heavy cream and Parmesan cheese.
Bring to a simmer and cook for 5-7 minutes, or until sauce has thickened.

Serve over pasta or rice.
Tips:
For a creamier sauce, use more heavy cream.
For a spicier sauce, add a pinch of red pepper flakes.
Serve with crusty bread to soak up the sauce.
