Creamy Pesto Pasta with Grilled SalmonIngredients:
For the Pesto:
1 cup fresh basil leaves 1/2 cup grated Parmesan cheese 1/4 cup pine nuts 1/4 cup olive oil 1 garlic clove, minced Salt and pepper to tasteFor the Pasta:
1 pound pasta (such as fettuccine or penne) 1/2 cup heavy cream 1/4 cup grated Parmesan cheese Salt and pepper to tasteFor the Salmon:
1 pound salmon fillet, skin on 1 tablespoon olive oil 1 teaspoon lemon zest 1/2 teaspoon dried oregano Salt and pepper to tasteInstructions:
For the Pesto:

In a blender or food processor, combine the basil leaves, Parmesan cheese, pine nuts, olive oil, garlic, salt, and pepper.
Blend until smooth.
For the Pasta:
1.
Cook the pasta according to package directions.
Reserve 1/2 cup of the pasta cooking water.

In a large skillet, combine the heavy cream and Parmesan cheese.
Bring to a simmer over medium heat.

Add the drained pasta to the skillet and stir.
Season with salt and pepper to taste.
For the Salmon:
1.
Preheat a grill or grill pan over medium heat.

Brush the salmon fillet with olive oil.
Season with lemon zest, oregano, salt, and pepper.
3.
Grill the salmon for 4-5 minutes per side, or until cooked through.
To Assemble:
1.
Place the pasta on a serving platter.
2.
Top the pasta with the pesto sauce.
3.
Arrange the grilled salmon on top of the pasta.
4.
Garnish with additional Parmesan cheese, if desired.
Tips:
For a richer pesto, use extra virgin olive oil.
If you don’t have a grill, you can bake the salmon in the oven at 400 degrees Fahrenheit for 12-15 minutes, or until cooked through.
Serve the dish with a side of crusty bread for mopping up the delicious sauce.
