Easy One-Pot Chicken and RiceIngredients:
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces 1 cup white or brown rice 1 onion, chopped 2 cloves garlic, minced 4 cups chicken broth or water 1 teaspoon dried oregano 1/2 teaspoon dried thyme 1/4 teaspoon salt 1/4 teaspoon black pepper 1 cup frozen peas 1/4 cup chopped fresh parsleyInstructions:

Heat a large pot over medium heat.
Add the chicken pieces and cook until browned on all sides.

Add the onion and garlic to the pot and cook until softened, about 2-3 minutes.

Stir in the uncooked rice and cook for 1 minute.

Add the chicken broth, oregano, thyme, salt, and pepper.
5.
Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
6.
Add the peas and parsley to the pot.
Cook for an additional 5 minutes, or until the peas are heated through and the rice is tender and all of the liquid has been absorbed.
7.
Remove from heat and let sit for 5 minutes before serving.
Tips:
For a creamier texture, add 1/2 cup of milk or cream to the broth.
Add other vegetables of your choice, such as carrots, celery, or bell peppers.
Serve with a side of crusty bread or a green salad.
