Chicken and Broccoli Stir-FryIngredients:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces 1 tablespoon vegetable oil 1 head of broccoli, cut into florets 1 cup sliced carrots 1 cup sliced celery 1/2 cup sliced green bell pepper 1/2 cup sliced red bell pepper 1/2 cup chopped onion 1/4 cup soy sauce 2 tablespoons honey 1 tablespoon rice vinegar 1 teaspoon sesame oil 1/2 teaspoon ground ginger 1/4 teaspoon garlic powder Salt and pepper to tasteInstructions:

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken and cook until browned on all sides.

Add the broccoli, carrots, celery, green bell pepper, red bell pepper, and onion to the skillet.

Tips:
For a vegetarian version, omit the chicken and use tofu or tempeh instead.
Add other vegetables to your stir-fry, such as snap peas, snow peas, or baby corn.

Top with chopped peanuts or cashews for a crunchy topping.
