Creamy Tomato Basil SoupIngredients:
3 tablespoons olive oil 1 medium yellow onion, chopped 2 garlic cloves, minced 28 ounces canned whole tomatoes, with juices 4 cups chicken or vegetable broth 1/2 cup heavy cream 1/4 cup fresh basil, chopped Salt and black pepper to tasteInstructions:

Heat olive oil in a large pot over medium heat.

Add onion and cook for 5-7 minutes, until softened.
3.
Add garlic and cook for 1 minute more.
4.
Pour in canned tomatoes and use a wooden spoon to break them up.
5.
Add chicken or vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
6.
Puree the soup using an immersion blender or regular blender.
7.
Return soup to the pot and add heavy cream, basil, salt, and pepper to taste.
8.
Bring to a gentle simmer and cook for 5 minutes more.
9.
Serve immediately, garnished with additional fresh basil if desired.
