Creamy Tuscan ChickenIngredients:
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces 1 tablespoon olive oil 1 onion, chopped 2 cloves garlic, minced 1 red bell pepper, chopped 1/2 cup sun-dried tomatoes, oil-packed 1/2 cup heavy cream 1/2 cup grated Parmesan cheese 1/4 cup chopped fresh basil Salt and black pepper, to tasteInstructions:

Season the chicken with salt and pepper.

Heat the olive oil in a large skillet over medium heat.
3.
Add the chicken and cook until browned on all sides.

Remove the chicken from the skillet and set aside.

Add the onion, garlic, and bell pepper to the skillet and cook until softened about 5 minutes.

Stir in the sun-dried tomatoes.
7.
Return the chicken to the skillet and cook until cooked through, about 5 minutes more.

Reduce the heat to low and stir in the heavy cream, Parmesan cheese, and basil.
9.
Simmer until the sauce has thickened, about 2 minutes.
10.
Season with salt and black pepper to taste.

Serve over pasta or with crusty bread for dipping.
