Spaghetti CarbonaraIngredients:
1 pound spaghetti 1/2 pound pancetta or bacon, cut into small pieces 2 large eggs 1/2 cup grated Parmesan cheese 1/4 cup grated pecorino cheese Freshly ground black pepper, to tasteInstructions:

Bring a large pot of salted water to a boil.
Add the spaghetti and cook according to the package directions.

While the spaghetti is cooking, heat a large skillet over medium heat.
Add the pancetta and cook until crispy, about 5 minutes.

In a large bowl, whisk together the eggs, Parmesan cheese, pecorino cheese, and black pepper.

When the spaghetti is cooked, drain it and transfer it to the bowl with the egg mixture.

Add the crispy pancetta to the bowl and toss to combine.

Serve immediately, garnished with additional Parmesan cheese if desired.
Tips:
For a creamier sauce, use heavy cream instead of eggs.
If you don’t have pancetta or bacon, you can use any type of diced cured meat, such as prosciutto or salami.
Add a splash of white wine to the skillet when cooking the pancetta for extra flavor.
Serve with a side of crusty bread to soak up the sauce.
