Lemon Herb Roasted ChickenIngredients:
1 whole chicken (3-4 pounds) 1 tablespoon olive oil 1 lemon, zested and juiced 1 tablespoon dried oregano 1 tablespoon dried thyme 1 teaspoon salt 1/2 teaspoon black pepperInstructions:

Preheat oven to 400°F (200°C).

Remove the chicken from the refrigerator and allow it to come to room temperature for 30 minutes.

In a small bowl, whisk together the olive oil, lemon zest and juice, oregano, thyme, salt, and pepper.

Rub the mixture all over the chicken, making sure to get under the skin.
5.
Place the chicken in a roasting pan and roast in the preheated oven for 1 hour and 15-20 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
6.
Remove the chicken from the oven and let it rest for 10 minutes before carving and serving.
Tips:
For a crispy skin, roast the chicken uncovered.
If the skin starts to brown too much, cover the chicken loosely with aluminum foil.
Add some vegetables to the roasting pan, such as potatoes, carrots, or onions, for a complete meal.
