Creamy Tomato and Spinach PastaIngredients:
1 pound pasta (such as penne, macaroni, or spaghetti) 1 tablespoon olive oil 1 onion, chopped 2 cloves garlic, minced 1 (28-ounce) can diced tomatoes 1 (15-ounce) can tomato sauce 1 cup heavy cream 1/2 cup grated Parmesan cheese 1/2 cup chopped fresh spinach Salt and black pepper to tasteInstructions:

Cook the pasta according to the package directions.
While the pasta is cooking, prepare the sauce.

In a large skillet, heat the olive oil over medium heat.
Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute more.

Stir in the diced tomatoes, tomato sauce, heavy cream, and Parmesan cheese.
Bring to a simmer and cook for 10 minutes, or until the sauce has thickened slightly.

Add the cooked pasta to the sauce and stir to combine.

Add the spinach and cook for 2-3 minutes, or until wilted.

Season with salt and black pepper to taste.

Serve immediately, topped with additional Parmesan cheese, if desired.
