Easy Chicken Stir-FryIngredients:
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces 1 tablespoon vegetable oil 1/2 cup chopped onion 1/2 cup chopped green pepper 1/2 cup chopped red pepper 1/4 cup soy sauce 1/4 cup chicken broth 1 tablespoon cornstarch 1/4 cup water 1 teaspoon sesame oil Salt and pepper to tasteInstructions:

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken to the skillet and cook until browned on all sides, about 5 minutes.
3.
Add the onion, green pepper, and red pepper to the skillet and cook until softened, about 3 minutes.
4.
In a small bowl, whisk together the soy sauce, chicken broth, cornstarch, and water.

Pour the sauce into the skillet and bring to a boil.
Reduce heat to low and simmer until the sauce thickens, about 1 minute.
6.
Stir in the sesame oil, salt, and pepper to taste.
7.
Serve over rice or noodles.
Tips:
For a spicier stir-fry, add 1-2 teaspoons of Sriracha or chopped chili peppers.
To add more vegetables, try adding broccoli, snap peas, or carrots.
If you don’t have soy sauce, you can substitute 2 tablespoons of tamari or coconut aminos.
