Creamy Mushroom and Spinach PastaIngredients:
1 pound pasta (penne, fusilli, or spaghetti) 1 tablespoon olive oil 1 large onion, chopped 4 cloves garlic, minced 1 pound mushrooms, sliced 10 ounces baby spinach 1 cup heavy cream 1/2 cup grated Parmesan cheese 1/4 teaspoon salt 1/4 teaspoon black pepperInstructions:

Cook pasta according to package directions.

Heat olive oil in a large skillet over medium heat.

Add onion and garlic and cook until softened, about 5 minutes.

Add mushrooms and cook until tender and browned, about 10 minutes.

Stir in spinach and cook until wilted, about 2 minutes.

Add heavy cream, Parmesan cheese, salt, and pepper.
Bring to a simmer and cook until thickened, about 5 minutes.
7.
Drain pasta and add to the sauce.
Toss to combine.

Serve immediately, garnished with additional Parmesan cheese if desired.
