Creamy Spinach Alfredo PastaIngredients:
1 pound fettuccine or other pasta 1 pound fresh spinach 1 tablespoon olive oil 1/2 onion, chopped 4 cloves garlic, minced 1/2 cup all-purpose flour 4 cups milk 1 cup grated Parmesan cheese 1/2 cup grated Gruyere cheese 1/4 cup chopped fresh parsley Salt and black pepper, to tasteInstructions:

Cook pasta according to package instructions.

While pasta is cooking, heat olive oil in a large skillet over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook for 1 minute more.

Stir in flour and cook for 1 minute, stirring constantly.

Gradually whisk in milk, stirring until smooth.
7.
Bring sauce to a simmer and cook until thickened, about 5 minutes.
8.
Remove from heat and stir in Parmesan and Gruyere cheeses.
Season with salt and pepper to taste.

Drain pasta and add to the sauce.
10.
Stir in spinach and cook until wilted, about 1 minute.

Sprinkle with parsley and serve immediately.
Tips:
For a richer sauce, use heavy cream instead of milk.
Add a pinch of nutmeg or red pepper flakes for extra flavor.
If you don’t have fresh spinach, you can use frozen spinach that has been thawed and drained.
Serve with crusty bread or a side salad.
