Creamy Roasted Tomato Basil PastaIngredients:
1 pound spaghetti noodles 1 quart cherry tomatoes 1/4 cup olive oil 2 cloves garlic, minced 1/2 onion, chopped 1 (15-ounce) can tomato sauce 1/2 cup heavy cream 1/2 cup freshly grated Parmesan cheese 1/4 cup chopped fresh basil Salt and pepper to tasteInstructions:

Preheat oven to 400°F (200°C).

Toss cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper.
Spread on a baking sheet and roast for 25-30 minutes, or until softened and slightly caramelized.

While tomatoes are roasting, cook spaghetti according to package directions.

In a large skillet, heat remaining 2 tablespoons of olive oil over medium heat.
Add garlic and onion and cook until softened.

Stir in tomato sauce, heavy cream, and roasted tomatoes.
Bring to a simmer and cook for 10-15 minutes, or until sauce has thickened.

Season with salt and pepper to taste.

Add cooked spaghetti to the skillet and toss to coat in the sauce.

Transfer pasta to a serving dish and sprinkle with Parmesan cheese and basil.
Tips:
For a spicy pasta, add a pinch of red pepper flakes to the sauce.
For a richer flavor, use sun-dried tomatoes instead of cherry tomatoes.
Serve with a side of crusty bread for dipping.
