Easy Chicken SatayIngredients:
1 boneless, skinless chicken breast, cut into 1-inch cubes 1/4 cup creamy peanut butter 2 tablespoons reduced-sodium soy sauce 1 tablespoon honey 1 tablespoon Sriracha sauce 1/2 teaspoon grated fresh ginger 1/4 teaspoon ground cumin 1/4 teaspoon ground coriander 12 wooden skewersInstructions:

In a medium bowl, combine the chicken, peanut butter, soy sauce, honey, Sriracha, ginger, cumin, and coriander.
Toss to coat evenly.

Thread the chicken cubes onto the skewers.

Heat a grill or grill pan over medium heat.

Grill the skewers for 8-10 minutes, or until cooked through, turning occasionally.

Serve hot with your favorite dipping sauce.
Tips:
For a more flavorful satay, marinate the chicken in the peanut butter mixture for at least 30 minutes before grilling.
You can use any type of peanut butter in this recipe.
If you don’t have Sriracha, you can substitute another hot sauce.
Serve the chicken satay with rice or noodles, vegetables, or a side of dipping sauce.
