Creamy Tomato Basil SoupIngredients:
2 tablespoons olive oil 1 onion, chopped 3 cloves garlic, minced 24 ounces diced tomatoes (1 can) 3 cups chicken broth 1 cup heavy cream 1/2 cup fresh basil leaves, chopped Salt and pepper to tasteInstructions:

Heat the olive oil in a large pot over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute more.

Stir in the tomatoes, chicken broth, and heavy cream.
Bring to a boil.

Reduce heat to low and simmer for 15-20 minutes, or until the flavors have blended.

Puree the soup using an immersion blender or regular blender.

Return the soup to the pot and stir in the basil.
Season with salt and pepper to taste.

Serve hot with a side of crusty bread or crackers.
Tips:
For a richer flavor, use homemade chicken broth instead of store-bought.
You can also add other vegetables to the soup, such as carrots, celery, or zucchini.
If you don’t have heavy cream, you can substitute it with milk or half-and-half.
Garnish the soup with grated Parmesan cheese or fresh herbs for extra flavor.
