Pasta CarbonaraIngredients:
1 pound spaghetti 8 ounces pancetta, diced 5 large eggs 1/2 cup grated Parmesan cheese 1/4 cup grated Pecorino Romano cheese Salt and black pepper to tasteInstructions:

Cook the spaghetti according to package directions.

While the pasta is cooking, render the pancetta in a large skillet over medium heat until crispy.

In a large bowl, whisk together the eggs, Parmesan cheese, Pecorino Romano cheese, salt, and pepper.

Drain the spaghetti and add it to the skillet with the pancetta.

Over low heat, add the egg mixture to the pasta and toss vigorously.
The heat from the pasta will cook the eggs, creating a creamy sauce.

Serve immediately, garnished with additional Parmesan cheese if desired.
