Creamy Tuscan ChickenIngredients:
1 boneless, skinless chicken breast (about 1 pound) Salt and black pepper to taste 1 tablespoon olive oil 1/2 onion, diced 2 cloves garlic, minced 1/2 cup sun-dried tomatoes (packed in oil) 1/2 cup heavy cream 1/4 cup grated Parmesan cheese 1/4 cup fresh basil, choppedInstructions:

Preheat oven to 400°F (200°C).

Season chicken breast with salt and pepper.
Heat olive oil in a large skillet over medium heat.
Add chicken and cook for 3-4 minutes per side, or until golden brown.
Transfer chicken to a baking dish.

In the same skillet, sauté onion and garlic for 2-3 minutes, or until softened.
Add sun-dried tomatoes and cook for 1 minute more.

Pour heavy cream into the skillet and bring to a simmer.
Reduce heat to low and let simmer for 5-7 minutes, or until sauce has thickened.

Pour sauce over chicken in the baking dish.
Sprinkle with Parmesan cheese and fresh basil.

Tips:
For a richer flavor, use sun-dried tomatoes that have been soaked in olive oil.
Add a pinch of red pepper flakes for a bit of heat.
Top with additional grated Parmesan cheese before serving.
