Homemade Pizza with Roasted VegetablesIngredients:
For the Dough:
2 1/4 cups all-purpose flour, plus more for dusting 1 teaspoon active dry yeast 1 teaspoon sugar 1 teaspoon salt 1 cup warm water (105-115°F)For the Roasted Vegetables:
1 bell pepper, sliced 1 zucchini, sliced 1 yellow squash, sliced 1/2 red onion, sliced 2 cloves garlic, minced 2 tablespoons olive oil Salt and pepper to tasteFor the Topping:
1 cup tomato sauce 1/2 cup grated mozzarella cheese 1/4 cup grated Parmesan cheese Fresh basil leaves, for garnishInstructions:
For the Dough:
1.
In a large mixing bowl, combine the flour, yeast, sugar, and salt.

Gradually add the warm water and mix with a wooden spoon until a dough forms.
3.
Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
4.
Grease a large bowl and place the dough inside.
Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
For the Roasted Vegetables:
1.
Preheat oven to 425°F (220°C).
2.
In a large bowl, combine the bell pepper, zucchini, squash, red onion, garlic, olive oil, salt, and pepper.
Toss to coat.

Spread the vegetables on a baking sheet and roast for 15-20 minutes, or until tender and slightly browned.
For the Pizza:
1.
Once the dough has risen, punch it down and divide it in half.
2.
On a lightly floured surface, roll out each half of the dough into a 12-inch circle.
3.
Transfer the dough circles to a greased baking sheet or pizza stone.
4.
Spread the tomato sauce evenly over the dough circles.
5.
Top with the roasted vegetables.
6.
Sprinkle with the mozzarella and Parmesan cheeses.
7.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly and the crust is golden brown.
8.
Garnish with fresh basil leaves and serve warm.
