Easy Chicken and Broccoli Stir-FryIngredients:
1 boneless, skinless chicken breast (about 4 ounces), thinly sliced 1 cup broccoli florets 1/2 cup chopped onion 1/2 cup chopped red bell pepper 1/4 cup soy sauce 2 tablespoons brown sugar 1 tablespoon rice vinegar 1 tablespoon vegetable oil 1/4 teaspoon black pepper 2 teaspoons sesame oil (optional)Instructions:

In a shallow dish, whisk together the soy sauce, brown sugar, rice vinegar, black pepper, and sesame oil (if using).

Add the chicken slices to the marinade and toss to coat.
Allow to marinate for at least 15 minutes.

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken and cook, stirring constantly, until browned on all sides.

Add the broccoli, onion, and red bell pepper to the skillet.
Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.

Pour the reserved marinade into the skillet and bring to a boil.
Reduce heat and simmer for 1-2 minutes, or until the sauce has thickened.

Serve the stir-fry over rice or noodles, if desired.
Tips:
For a healthier version, use a non-stick skillet and reduce the amount of vegetable oil.
You can add other vegetables to this stir-fry, such as carrots, zucchini, or mushrooms.
If you don’t have brown sugar, you can substitute honey or maple syrup.
Serve with hot sauce or sriracha for an extra kick.
