Tips:
For the best flavor, use ripe, seasonal tomatoes.
You can also add red onion, sliced olives, or roasted peppers for extra flavor.
If you don’t have fresh mozzarella, you can substitute with a good quality part-skim mozzarella.
To make a vegan version, replace the mozzarella with firm tofu that has been pressed and sliced.
