For the Chicken:
1 boneless, skinless chicken breast (4-6 ounces), pounded thin 1/4 cup all-purpose flour 1/2 teaspoon salt 1/4 teaspoon black pepper 1 large egg 1/2 cup bread crumbsFor the Sauce:
1 (28-ounce) can crushed tomatoes 1 (6-ounce) can tomato paste 1/2 teaspoon dried oregano 1/4 teaspoon dried basil 1/8 teaspoon garlic powder 1/8 teaspoon onion powder Salt and pepper to tasteFor the Topping:
1/2 cup shredded mozzarella cheese 1/4 cup grated Parmesan cheeseInstructions:

Prepare the chicken:
Season the chicken breast with salt and pepper.
Dip the chicken in the flour, then the egg, and finally the bread crumbs.

Cook the chicken:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the chicken and cook for 2-3 minutes per side, or until golden brown and cooked through.

Make the sauce:
While the chicken is cooking, combine the crushed tomatoes, tomato paste, oregano, basil, garlic powder, onion powder, salt, and pepper in a medium saucepan.
Bring to a simmer and cook for 15-20 minutes, or until slightly thickened.

Assemble the chicken parmesan:
Preheat the oven to 375°F (190°C).
Spread 1 cup of the sauce in a 9×13-inch baking dish.
Top with the chicken breasts.
Pour the remaining sauce over the chicken.

Bake for 15-20 minutes, or until the cheese is melted and bubbly.

Serve:
Sprinkle with the mozzarella and Parmesan cheeses and serve immediately with your favorite pasta or salad.
Tips:
For a crispier chicken, double-coat it in the bread crumbs.
If you don’t have a meat pounder, you can use a rolling pin to pound the chicken thin.
Feel free to adjust the spices in the sauce to your taste.
You can also add other toppings to your chicken parmesan, such as mushrooms, bell peppers, or olives.
