Chicken PiccataIngredients:
4 boneless, skinless chicken breasts, pounded thin 1/2 cup all-purpose flour 1 teaspoon salt 1/2 teaspoon black pepper 1/4 cup olive oil 1/4 cup butter 2 cloves garlic, minced 1/2 cup dry white wine 1/2 cup chicken broth 1/4 cup capers 1/4 cup chopped fresh parsleyInstructions:

Preheat oven to 400 degrees F (200 degrees C).

In a shallow dish, combine flour, salt, and pepper.
Dredge chicken in flour mixture.

Heat olive oil and butter in a large skillet over medium-high heat.
Cook chicken for 3-4 minutes per side, or until golden brown.

Transfer chicken to a baking dish and cook in the preheated oven for 10-12 minutes, or until cooked through.

Meanwhile, in the same skillet, add garlic and cook for 1 minute.
Add wine and chicken broth and cook until reduced by half.

Stir in capers and season with salt and pepper to taste.

Pour sauce over chicken breasts and sprinkle with parsley.
8.
Serve immediately with your favorite side dishes.
