Creamy Tuscan ChickenIngredients:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces 1 tablespoon olive oil 1/2 cup chopped onion 2 cloves garlic, minced 1 (10 ounce) can cream of chicken soup 1/2 cup milk 1/4 cup grated Parmesan cheese 1/4 teaspoon dried thyme 1/4 teaspoon dried basil Salt and pepper to taste 1 (15 ounce) can black beans, rinsed and drained 1 (15 ounce) can corn, drainedInstructions:

Heat the olive oil in a large skillet over medium heat.

Add the chicken and cook until browned on all sides.

Stir in the onion and garlic and cook until softened, about 5 minutes.

Add the cream of chicken soup, milk, Parmesan cheese, thyme, basil, salt, and pepper.

Bring to a simmer and cook until the chicken is cooked through, about 15 minutes.
6.
Stir in the black beans and corn and heat through.
7.
Serve over rice or pasta, if desired.
Tips:
For a spicier version, add a pinch of red pepper flakes.
You can also add other vegetables to this dish, such as chopped bell peppers or mushrooms.
If you don’t have black beans, you can use pinto beans or kidney beans instead.
Top with fresh parsley or chives before serving for extra flavor.
