Creamy Cajun Chicken PastaIngredients:
1 pound boneless, skinless chicken breasts, cooked and shredded 1 pound pasta (penne, rotini, or ziti) 1 cup chopped onion 1 bell pepper, chopped (any color) 1 cup sliced mushrooms 1/2 cup heavy cream 1/2 cup milk 1/4 cup Cajun seasoning 1/4 cup grated Parmesan cheese Salt and pepper to tasteInstructions:

Cook the pasta according to package directions.
Drain and set aside.

In a large skillet or Dutch oven, sauté the onion, bell pepper, and mushrooms in a little olive oil until softened.

Add the Cajun seasoning and cook for 1 minute longer.

Stir in the shredded chicken, heavy cream, milk, Parmesan cheese, salt, and pepper.
Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened slightly.

Add the cooked pasta to the skillet and stir to combine.
Cook for 1-2 minutes longer, just to heat through.

Serve immediately topped with additional Parmesan cheese, if desired.
Tips:
For a spicier dish, use more Cajun seasoning.
You can substitute any other cooked meat, such as sausage, shrimp, or steak, for the chicken.
Add a handful of chopped fresh parsley or cilantro at the end for a pop of color and flavor.
Serve with a side of crusty bread to soak up the sauce.
