Creamy Lemon Ricotta PastaIngredients:
1 pound pasta (any shape) 1 cup ricotta cheese 1/2 cup grated Parmesan cheese 1/4 cup lemon juice 1/4 cup heavy cream 1 tablespoon olive oil 1/4 cup chopped fresh parsley Salt and black pepper to tasteInstructions:

Cook the pasta according to the package directions.
Drain and set aside.

Add the ricotta cheese and stir until smooth.

Bring to a simmer and cook for 2-3 minutes, or until the sauce thickens slightly.

Tips:
For a richer sauce, use whole milk ricotta cheese.
