Creamy Lemon Ricotta PastaIngredients:
1 pound pasta (such as rigatoni, penne, or fusilli) 1 cup ricotta cheese 1/2 cup grated Parmesan cheese 1/4 cup heavy cream 1 lemon, zested and juiced 1/2 teaspoon salt 1/4 teaspoon black pepper 1/4 cup chopped fresh basilInstructions:

Cook the pasta in a large pot of salted boiling water according to the package directions.

While the pasta is cooking, whisk together the ricotta cheese, Parmesan cheese, heavy cream, lemon zest, lemon juice, salt, and pepper in a large bowl.

Drain the pasta and add it to the bowl with the ricotta mixture.
Toss to combine.
4.
Stir in the fresh basil.
5.
Serve immediately with additional grated Parmesan cheese, if desired.
