Creamy Pesto Pasta with Sun-Dried TomatoesIngredients:
1 pound pasta (such as penne or rigatoni) 1 cup sun-dried tomatoes, chopped 1/2 cup olive oil 1/2 cup heavy cream 1/2 cup grated Parmesan cheese 1/4 cup chopped fresh basil 2 cloves garlic, minced Salt and black pepper to tasteInstructions:

Cook the pasta according to the package directions.

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
Add the garlic and sauté until fragrant, about 1 minute.

Stir in the sun-dried tomatoes and sauté until slightly softened, about 2 minutes.

Add the heavy cream and Parmesan cheese to the skillet and bring to a simmer.
Reduce heat to low and simmer for 5-7 minutes, or until the sauce has thickened slightly.

Season with salt and black pepper to taste.

Drain the pasta and add it to the skillet with the sauce.
Toss to combine.

Stir in the chopped basil and serve immediately, garnished with additional Parmesan cheese if desired.
