Creamy Spinach and Artichoke DipIngredients:
1 pound fresh spinach, stems removed and chopped 1 (14-ounce) can artichoke hearts, drained and chopped 1 cup grated Parmesan cheese 1 cup grated mozzarella cheese 1/2 cup Greek yogurt 1/2 cup mayonnaise 1/4 cup chopped red onion 2 minced garlic cloves 1/4 cup grated Manchego cheese (optional) Salt and pepper to tasteInstructions:

Preheat oven to 350°F (175°C).

In a large skillet, cook spinach until wilted.
Drain any excess liquid.

In a large bowl, combine spinach, artichokes, Parmesan cheese, mozzarella cheese, Greek yogurt, mayonnaise, red onion, and garlic.

Season with salt and pepper to taste.

Pour dip into a 9×13 inch baking dish.

Top with Manchego cheese, if desired.

Bake for 20-25 minutes, or until cheese is melted and bubbly.
8.
Serve warm with chips, crackers, or vegetables.
