Creamy Spinach and Mushroom PastaIngredients:
For the Pasta:
1 pound pasta (penne, rotini, or your preferred shape) 1 tablespoon olive oilFor the Sauce:
1 tablespoon butter 1/2 cup chopped onion 1/2 cup chopped mushrooms 1 cup chopped spinach 1/2 cup heavy cream 1/2 cup chicken or vegetable broth 1/4 cup grated Parmesan cheese 1/4 teaspoon salt 1/8 teaspoon black pepperInstructions:

Cook the Pasta:
Cook the pasta according to the package directions.
Drain and set aside.

In a large skillet over medium heat, melt the butter.
Add the onion and cook until softened, about 5 minutes.

Stir in the spinach and cook until wilted.
