Creamy Spinach and Parmesan PastaIngredients:
1 pound dried pasta (such as penne, shells, or rotini) 1 bunch fresh spinach, washed and chopped 1/2 cup grated Parmesan cheese 1/4 cup heavy cream 1/4 cup grated Gruyere cheese 1/4 cup chopped fresh parsley 1/4 cup chopped yellow onion 1/4 cup chopped red bell pepper 2 cloves garlic, minced 1/2 cup chicken broth or vegetable broth 1/4 teaspoon salt 1/4 teaspoon black pepperInstructions:

Cook the pasta according to package directions.
Reserve 1/2 cup of the pasta cooking water.

While the pasta is cooking, melt a pat of butter in a large skillet over medium heat.

Add the onion, bell pepper, and garlic to the skillet and cook until softened, about 5 minutes.

Stir in the spinach and cook until wilted, about 2 minutes.

Add the chicken broth, salt, and pepper to the skillet and bring to a simmer.

Stir in the Parmesan cheese and heavy cream.
Reduce heat to low and simmer for 5 minutes, or until the sauce has thickened.

Add the cooked pasta to the skillet and stir to combine.

Remove the skillet from the heat and stir in the Gruyere cheese.
9.
Garnish with parsley and serve immediately.
Tips:
For a richer sauce, use whole milk or half and half instead of heavy cream.
Add a pinch of red pepper flakes or a dash of cayenne pepper for a bit of spice.
Serve the pasta with grilled chicken or shrimp for a complete meal.
