Creamy Pesto Pasta with Sun-Dried TomatoesIngredients:
1 pound pasta (such as penne, rotini, or farfalle) 1 cup heavy cream 1/2 cup prepared pesto 1/2 cup sun-dried tomatoes (oil-packed) 1/4 cup grated Parmesan cheese 1/4 cup chopped fresh basil Salt and pepper to tasteInstructions:

Cook the pasta according to package directions.

While the pasta is cooking, in a large skillet, combine the heavy cream, pesto, sun-dried tomatoes, Parmesan cheese, basil, salt, and pepper.
Bring to a simmer over medium heat, stirring occasionally.

Drain the pasta and add it to the sauce.
Toss well to coat.

Cook over medium heat for 2-3 minutes, or until the sauce has thickened to your desired consistency.

Serve immediately, garnished with additional Parmesan cheese and basil.
Tips:
If you don’t have prepared pesto, you can make your own by combining fresh basil, pine nuts, Parmesan cheese, garlic, olive oil, and salt and pepper in a food processor and blending until smooth.
For a richer flavor, use a combination of salty and sweet sun-dried tomatoes.
Add a splash of white wine to the sauce for a more complex flavor.
Serve this pasta with a side of crusty bread to soak up the delicious sauce.
