Creamy Tomato Basil PastaIngredients:
1 pound pasta (penne, rotini, or your favorite) 1/2 cup heavy cream 1/2 cup grated Parmesan cheese 1/4 cup chopped fresh basil 1/4 cup chopped sun-dried tomatoes (optional) 1/4 cup chopped fresh parsley 1/4 cup olive oil 2 cloves garlic, minced 1/2 onion, chopped 28-ounce can diced tomatoes Salt and pepper to tasteInstructions:

Cook the pasta according to package directions.

In a large skillet, heat the olive oil over medium heat.
Add the garlic and onion and cook until softened, about 5 minutes.

Add the diced tomatoes, basil, parsley, and sun-dried tomatoes (if using).
Season with salt and pepper to taste.

Bring to a simmer and cook for 15-20 minutes, or until the sauce has thickened.

Stir in the heavy cream and Parmesan cheese and cook until warmed through.

Drain the pasta and add it to the skillet with the sauce.
Toss to combine.

Serve immediately, garnished with additional Parmesan cheese and basil if desired.
Tips:
For a richer flavor, use roasted garlic instead of minced garlic.
Add a pinch of red pepper flakes to the sauce for a bit of heat.
If you don’t have fresh basil, you can use 1 tablespoon of dried basil.
Serve with a side of crusty bread for dipping.
