Creamy Tomato Basil SoupIngredients:
1 tablespoon olive oil 1 onion, chopped 2 cloves garlic, minced 1 (28-ounce) can crushed tomatoes 1 cup vegetable broth 1/2 cup heavy cream 1/4 cup chopped fresh basil Salt and pepper to tasteInstructions:

In a medium saucepan, heat the olive oil over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute more.

Stir in the crushed tomatoes and vegetable broth.

Bring to a boil, then reduce heat and simmer for 15 minutes.

Puree the soup with an immersion blender or a regular blender (make sure to vent the lid if using a regular blender).

Stir in the heavy cream and basil.

Season with salt and pepper to taste.

Tips:
For a richer flavor, use fire-roasted tomatoes.
Add a pinch of red pepper flakes for a little heat.
Top with grated Parmesan cheese or crumbled feta cheese for extra flavor and texture.
