Creamy Tomato Basil SoupIngredients:
2 tablespoons olive oil 1 large onion, chopped 2 cloves garlic, minced 3 cups vegetable broth 1 (28-ounce) can crushed tomatoes 1/2 cup heavy cream 1/4 cup chopped fresh basil Salt and black pepper to tasteInstructions:

Heat olive oil in a large pot over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook for 1 minute more.
4.
Stir in vegetable broth and crushed tomatoes.
Bring to a boil.
5.
Reduce heat and simmer for 15 minutes, or until tomatoes have softened.
6.
Puree soup using an immersion blender or in a regular blender in batches until smooth.
7.
Return soup to pot and stir in heavy cream and basil.
8.
Heat through for 5 minutes, or until heated through.
9.
Season with salt and black pepper to taste.
Tips:
For a richer flavor, use fire-roasted crushed tomatoes.
Add a pinch of red pepper flakes for a touch of heat.
Serve with a dollop of sour cream or grated Parmesan cheese.
