Creamy Tomato Basil SoupIngredients:
2 tablespoons olive oil 1 medium onion, chopped 3 cloves garlic, minced 4 cups fresh ripe tomatoes, diced 1 cup vegetable broth 1/2 cup heavy cream 1/2 cup chopped fresh basil 1/4 teaspoon salt 1/4 teaspoon black pepperInstructions:

In a large pot over medium heat, heat the olive oil.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for another minute, until fragrant.

Stir in the tomatoes and vegetable broth.

Tips:
For a richer flavor, use fire-roasted tomatoes.
Add a pinch of sugar to balance the acidity of the tomatoes.

Leftover soup can be stored in the refrigerator for up to 3 days.
