Creamy Tuscan Chicken Ingredients:
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces 1/2 cup all-purpose flour 1/4 cup olive oil 1/2 pound cremini mushrooms, sliced 1/2 cup sun-dried tomatoes, chopped 1/4 cup chopped fresh spinach 1 (15 ounce) can diced tomatoes, undrained 1 (8 ounce) package cream cheese, softened 1/4 cup milk 1/4 cup grated Parmesan cheese 1/4 teaspoon salt 1/4 teaspoon black pepper Instructions:

Preheat oven to 400 degrees F (200 degrees C).

Whisk together flour, salt and pepper.
Dredge chicken in flour mixture.

Heat olive oil in a large skillet over medium heat.
Brown chicken on all sides.
Remove chicken from skillet and set aside.

Add mushrooms and sun-dried tomatoes to skillet and cook until softened.
Stir in spinach and cook until wilted.
5.
In a bowl, whisk together cream cheese, milk, Parmesan cheese, salt and pepper.
Stir in diced tomatoes and chicken.
6.
Pour mixture into a greased 9×13 inch baking dish.
Top with chicken.

Bake for 20 minutes, or until chicken is cooked through and sauce is bubbly.
