Creamy Tuscan ChickenIngredients:
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces 1 tablespoon olive oil 1/2 cup chopped onion 2 cloves garlic, minced 1/2 cup sun-dried tomatoes, chopped 1/2 cup heavy cream 1/4 cup grated Parmesan cheese 1/4 cup chopped fresh basil Salt and pepper to tasteInstructions:

Heat the olive oil in a large skillet over medium heat.

Season the chicken with salt and pepper and add to the skillet.
Cook until browned on all sides.

Add the onion and garlic to the skillet and cook until softened.

Add the sun-dried tomatoes and cook for 1 minute.
5.
Pour in the heavy cream and bring to a simmer.
6.
Stir in the Parmesan cheese and basil and cook until the sauce has thickened slightly.
7.
Season with salt and pepper to taste.
8.
Serve over pasta, rice, or mashed potatoes.
Tips:
For a richer flavor, use sundried tomatoes that have been soaked in oil.
If you don’t have heavy cream, you can use milk instead.
Add a pinch of red pepper flakes for a touch of heat.
Garnish with additional Parmesan cheese and basil before serving.
