Creamy Tuscan SalmonIngredients:
1 pound salmon fillet, skinless and boneless 1 tablespoon olive oil 1/2 teaspoon dried oregano 1/4 teaspoon dried thyme 1/4 teaspoon salt 1/4 teaspoon black pepper 1/2 cup sun-dried tomatoes, chopped 1/2 cup chopped fresh spinach 1/2 cup heavy cream 1/4 cup grated Parmesan cheeseInstructions:

Preheat oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Season salmon with oregano, thyme, salt, and pepper.
Place on prepared baking sheet.

Roast salmon for 15-20 minutes, or until cooked through.

In a large skillet, heat olive oil over medium heat.

Add sun-dried tomatoes and spinach.
Cook for 2-3 minutes, or until spinach is wilted.

Stir in heavy cream and bring to a simmer.

Season with salt and pepper to taste.

Add cooked salmon to the sauce and simmer for 2-3 minutes, or until the salmon is heated through.

Transfer to a serving dish and sprinkle with Parmesan cheese.

Tips:
For a richer flavor, use heavy cream instead of milk.
If you don’t have sun-dried tomatoes, you can use fresh tomatoes instead.
You can add other vegetables to the sauce, such as mushrooms, zucchini, or bell peppers.
Serve with pasta, rice, or crusty bread.
