Chicken ParmesanIngredients:
1 boneless, skinless chicken breast (4-6 ounces) 1/2 cup Italian-style bread crumbs 1/4 cup grated Parmesan cheese 1/4 cup all-purpose flour 1 large egg 1/4 cup milk 1/4 cup vegetable oil 1/2 cup marinara sauce 1/4 cup shredded mozzarella cheeseInstructions:

Preheat oven to 400°F (200°C).

Pound the chicken breast thin using a meat mallet or rolling pin.

In a shallow bowl, combine the bread crumbs and Parmesan cheese.
In a separate shallow bowl, whisk together the flour and salt.
In a third shallow bowl, whisk together the egg and milk.

Dredge the chicken in the flour mixture, then dip in the egg mixture, and finally coat with the bread crumb mixture.

Heat the oil in a large skillet over medium heat.
Cook the chicken for 4-5 minutes per side, or until golden brown and cooked through.

Place the chicken in a baking dish and top with the marinara sauce and mozzarella cheese.

Bake for 10-15 minutes, or until the cheese is melted and bubbly.
Tips:
For a crispy crust, double-coat the chicken in the flour, egg, and bread crumbs.
To make the marinara sauce from scratch, combine 1 (28-ounce) can of crushed tomatoes, 1/2 cup chopped onion, 1/4 cup chopped green bell pepper, 1/4 cup chopped red bell pepper, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1 teaspoon sugar, and salt and pepper to taste.
Simmer for 30 minutes.
Serve the chicken Parmesan with a side of your favorite pasta or bread.
