Creamy Pesto PastaIngredients:
1 pound dried pasta (such as penne, rigatoni, or fusilli) 1/2 cup heavy cream 1/2 cup prepared pesto 1/2 cup grated Parmesan cheese 1/4 cup chopped sun-dried tomatoes 1/4 cup chopped fresh basil Salt and pepper to tasteInstructions:

Cook the pasta according to the package directions.

While the pasta is cooking, heat the heavy cream in a large skillet over low heat until simmering.
3.
Add the pesto to the skillet and stir to combine.
4.
Once the pasta is cooked, drain it and add it to the skillet.
5.
Stir until the pasta is evenly coated with the creamy pesto sauce.
6.
Remove the skillet from the heat and stir in the Parmesan cheese, sun-dried tomatoes, and fresh basil.
7.
Season with salt and pepper to taste.
Serve immediately with additional Parmesan cheese if desired.
Tips:
For a richer sauce, use full-fat heavy cream.
If you don’t have prepared pesto, you can make your own by combining 2 cups fresh basil, 1/2 cup olive oil, 1/4 cup pine nuts, 2 cloves of garlic, and a dash of salt and pepper.
To add a bit of heat, sprinkle some red pepper flakes into the sauce.
This pasta is also delicious served with grilled chicken or shrimp.
