Italian Meatball SubIngredients:
For the meatballs:
1 pound ground beef (80/20) 1/4 cup bread crumbs 1/4 cup grated Parmesan cheese 1/2 cup chopped onion 1/4 cup chopped parsley 1 egg, beaten 1/4 teaspoon salt 1/4 teaspoon black pepperFor the marinara sauce:
2 (28-ounce) cans whole tomatoes, crushed 1 onion, chopped 2 cloves garlic, minced 1 (15-ounce) can tomato sauce 1 teaspoon dried oregano 1 teaspoon dried basil 1/2 teaspoon salt 1/4 teaspoon black pepperFor assembly:
6 hoagie rolls, split 1 cup shredded mozzarella cheese 1/2 cup grated Parmesan cheese Optional:
chopped lettuce, tomato, and red onionInstructions:
Make the meatballs:

In a large bowl, combine all the meatball ingredients.
Mix thoroughly.

Form the mixture into 12 meatballs and place in a baking dish.
3.
Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until cooked through.
Make the marinara sauce:
1.
In a large saucepan, combine the crushed tomatoes, onion, garlic, tomato sauce, oregano, basil, salt, and pepper.

Bring to a simmer and cook for 20-30 minutes, or until the sauce has thickened.
Assemble the subs:
1.
Spread a layer of marinara sauce over the bottom of each hoagie roll.
2.
Place the meatballs on top of the sauce.
3.
Sprinkle with mozzarella cheese and grated Parmesan cheese.
4.
Top with lettuce, tomato, and red onion, if desired.
5.
Serve immediately.
Tips:
For a heartier sub, use Italian sausage in place of ground beef.
To make the dish ahead of time, cook the meatballs and sauce separately and store them in the refrigerator.
Assemble the subs just before serving.
Serve with a side of fries or salad for a complete meal.
