Easy Chicken Stir-FryIngredients:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces 1 tablespoon cornstarch 1 tablespoon soy sauce 1 tablespoon olive oil 1 cup chopped vegetables (such as broccoli, carrots, bell peppers, or onions) 1/2 cup stir-fry sauce (such as teriyaki, hoisin, or sweet and sour)Instructions:

In a medium bowl, combine the chicken pieces, cornstarch, and soy sauce.
Toss to coat.

Heat the olive oil in a large skillet or wok over medium-high heat.
3.
Add the chicken and cook, stirring occasionally, until browned and cooked through.

Add the chopped vegetables and stir-fry for 2-3 minutes, or until they begin to soften.
5.
Pour in the stir-fry sauce and toss to coat.
Cook for an additional 2-3 minutes, or until the sauce has thickened and the vegetables are cooked to your desired doneness.

Serve the chicken stir-fry over rice or noodles, and enjoy!Tips:
For a gluten-free version, use gluten-free soy sauce and cornstarch.
You can use any vegetables that you have on hand.
If you don’t have any stir-fry sauce, you can make your own by combining 1/4 cup soy sauce, 1/4 cup honey, 1/4 cup rice vinegar, and 1 tablespoon grated ginger.
Serve with a side of steamed rice or noodles.
