In a medium bowl, combine the chicken, broccoli, carrots, bell pepper, and onion.
Season with salt and pepper.

In a small bowl, whisk together the soy sauce, chicken broth, and corn starch until smooth.

Add the chicken mixture and cook, stirring constantly, until the chicken is no longer pink (about 5 minutes).

Add the sauce and cook, stirring, until the sauce thickens and coats the ingredients (about 1 minute).

Tips:
For a spicier stir-fry, add a pinch of red pepper flakes or chili powder.
Add other vegetables to your stir-fry, such as snap peas, snow peas, or mushrooms.
Serve with a side of brown rice or soba noodles for a complete meal.
