Easy Chicken Stir-FryIngredients:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces 1 tablespoon vegetable oil 1/2 onion, chopped 1/2 green bell pepper, chopped 1/2 red bell pepper, chopped 1 (15 ounce) can black beans, drained and rinsed 1 (15 ounce) can corn, drained 1/4 cup soy sauce 2 tablespoons brown sugar 1 tablespoon sesame oil 1/4 teaspoon ground black pepper 1 green onion, sliced for garnishInstructions:

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken and cook until browned on all sides, about 5 minutes.

Add the onion, green bell pepper, and red bell pepper to the skillet and cook until softened, about 5 minutes.

Stir in the black beans, corn, soy sauce, brown sugar, sesame oil, and black pepper.

Reduce heat to medium-low and simmer for 10 minutes, or until the sauce has thickened.

Garnish with green onions before serving.
Tips:
For a vegetarian option, substitute tofu for the chicken.
Add other vegetables to your stir-fry, such as broccoli, carrots, or snap peas.
Serve over rice, noodles, or tortillas.
