8 oz rice noodles ⅓ cup tamarind paste 1/3 cup fish sauce 3 tablespoons palm sugar (or brown sugar) 2 tablespoons peanut butter 1 tablespoon soy sauce 1 tablespoon vegetable oil 1 egg 1 cup bean sprouts 1 cup green onions, chopped 1 cup unsalted peanuts, chopped 1 lime, cut into wedgesInstructions:

Soak the noodles:
Place the rice noodles in a large bowl and cover them with warm water.
Let them soak for 10 minutes, or until they are softened.

Make the sauce:
In a small bowl, whisk together the tamarind paste, fish sauce, palm sugar, peanut butter, and soy sauce.
Set aside.

Cook the noodles:
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the drained noodles and cook, stirring constantly, for 3-4 minutes, or until they are heated through.

Add the egg:
Push the noodles to one side of the skillet and crack the egg into the empty space.
Cook the egg for 2-3 minutes, or until it is cooked to your desired doneness.
Break up the egg with a spatula and stir it into the noodles.

Add the sauce:
Pour the sauce into the skillet and stir to combine.
Cook for 1-2 minutes, or until the sauce has thickened slightly.
6.
Add the toppings:
Stir in the bean sprouts, green onions, and peanuts.
Cook for an additional 1-2 minutes, or until the bean sprouts are tender.
7.
Serve:
Transfer the pad thai to a serving dish and garnish with lime wedges.
