Easy Creamy Tomato SoupIngredients:
2 tablespoons olive oil 1 medium onion, chopped 2 cloves garlic, minced 1 (28-ounce) can crushed tomatoes 1 (15-ounce) can tomato sauce 1 cup vegetable broth 1/2 cup heavy cream 1/4 teaspoon sugar Salt and pepper to taste Fresh basil or parsley for garnish (optional)Instructions:

Heat the olive oil in a large saucepan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for another minute until fragrant.

Stir in the crushed tomatoes, tomato sauce, and vegetable broth.
Bring to a boil, then reduce heat and simmer for 15 minutes.

Use an immersion blender or regular blender to puree the soup until smooth.

Add the heavy cream and sugar.

Tips:
For a richer flavor, use fire-roasted tomatoes.
