Grilled Salmon with Roasted VegetablesIngredients:
For the salmon:
1 pound salmon fillets, skin-on 1 tablespoon olive oil Salt and pepper to tasteFor the vegetables:
1 zucchini, cut into chunks 1 bell pepper, cut into chunks 1 onion, cut into wedges 1 pound baby potatoes, halved 1 tablespoon olive oil 1 teaspoon dried oregano 1 teaspoon dried basil Salt and pepper to tasteInstructions:

Preheat grill to medium-high heat.

Brush salmon fillets with olive oil and season with salt and pepper.

Toss vegetables with olive oil, oregano, basil, salt, and pepper.

Place salmon fillets and vegetables on the grill.
5.
Grill salmon for 5-7 minutes per side, or until cooked through and flaky.
6.
Grill vegetables for 10-15 minutes, or until tender and slightly browned.
7.
Serve salmon with roasted vegetables immediately.
Tips:
If you don’t have a grill, you can roast the salmon and vegetables in the oven at 400°F (200°C) for 15-20 minutes, or until cooked through.
To make the salmon even more flavorful, marinate it in a mixture of olive oil, lemon juice, herbs, and spices for at least 30 minutes before grilling.
Serve with your favorite dipping sauce, such as tartar sauce, mayonnaise, or lemon wedges.
