Homemade Apple PieIngredients:
For the crust:
2 1/2 cups all-purpose flour 1 teaspoon salt 1 cup (2 sticks) unsalted butter, cold and cut into small pieces 1/4 to 1/2 cup ice waterFor the filling:
8 cups peeled, thinly sliced apples (about 5-6 medium apples) 1 cup sugar 1/4 cup cornstarch 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 2 tablespoons lemon juice 1/4 cup unsalted butter, cut into small piecesInstructions:
For the crust:

In a large bowl, whisk together the flour and salt.

Add the butter pieces and use your fingers or a pastry cutter to work them into the flour until coarse crumbs form.
3.
Add the ice water 1 tablespoon at a time, mixing until the dough just comes together.
Form into a ball and wrap in plastic wrap.
Refrigerate for at least 30 minutes.
For the filling:
1.
In a large bowl, combine the apples, sugar, cornstarch, cinnamon, nutmeg, and lemon juice.
Stir until combined.
To assemble the pie:
1.
Preheat oven to 375°F (190°C).
2.
On a lightly floured surface, roll out half of the dough to a 12-inch circle.
Transfer to a 9-inch pie plate and trim the edges.
3.
Pour the apple filling into the pie crust.
4.
Roll out the remaining dough to a 10-inch circle.
Cut into 1-inch wide strips.
5.
Arrange the strips over the filling in a lattice pattern or create another design of your choice.
6.
Trim the edges of the pie and tuck them under.
Crimp the edges to seal.
7.
Brush the crust with milk or beaten egg and sprinkle with sugar.
8.
Bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.
9.
Let cool on a wire rack for at least 2 hours before serving.
